Ingredients

  • Makes about 12 fritters (serves 4)
  • 2 cups corn kernels (fresh, frozen and thawed, or canned and drained)
  • 2 large eggs
  • 1/3 cup milk
  • 3/4 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon smoked paprika (optional)
  • 1 cup shredded cheddar cheese
  • 2 green onions, finely sliced
  • 1 small jalapeño, finely diced (optional, for heat)
  • 2–3 tablespoons vegetable oil, for frying

For serving:

  • Sour cream or Greek yogurt
  • Fresh chives or extra green onion
  • Lime wedges

Instructions

Make the batter. In a large bowl, whisk together the eggs and milk. Add the flour, baking powder, salt, pepper, and smoked paprika, and stir until just combined , don't overmix.

Fold in the good stuff. Add the corn, shredded cheddar, green onions, and jalapeño (if using). Fold gently until everything is evenly coated in batter.

Heat the pan. Warm 1–2 tablespoons of oil in a large nonstick skillet over medium heat until shimmering.

Fry the fritters. Drop heaped tablespoons of batter into the skillet, flattening each slightly with the back of the spoon. Cook in batches of 4–5 to avoid overcrowding.

Golden on both sides. Cook for 2–3 minutes per side, until deep golden brown and cooked through. Add more oil to the pan as needed between batches.

Drain and serve. Transfer fritters to a paper towel–lined plate to drain briefly. Serve warm, topped with a dollop of sour cream and a sprinkle of fresh chives, with lime wedges on the side.

Tips for the Best Fritters

Don't skip draining the corn - excess moisture makes the batter too wet and the fritters soggy.

Keep the heat at medium. Too hot and the outside burns before the inside cooks; too low and they turn greasy.

Cheese swap: Try pepper jack for extra kick, or feta for a tangy twist.

Make it gluten-free: Substitute a 1:1 gluten-free flour blend.

Storage: Keep leftovers in an airtight container in the fridge for up to 3 days. Reheat in a skillet or air fryer to keep them crisp - the microwave will make them soggy.
