Ingredients
- 4 boneless, skinless chicken thighs (or 2 breasts)
- 1 tbsp olive oil
- 1 tbsp butter
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup long-grain white rice, rinsed
- 2 cups chicken broth
- 1 tsp paprika
- 1 tsp dried thyme
- Salt and pepper to taste
- 1 cup frozen peas or diced carrots (optional)
- Fresh parsley, chopped (for garnish)
Instructions
- Season chicken with salt, pepper, and paprika. Heat olive oil in a large deep skillet or pot over medium-high heat. Sear chicken 4-5 minutes per side until golden (it doesn't need to be fully cooked yet). Remove and set aside.
- In the same pot, melt butter over medium heat. Add onion and cook 3-4 minutes until softened. Add garlic and cook 1 minute more.
- Stir in the rice and toast for 1-2 minutes, coating it in the fat and stirring often.
- Pour in chicken broth and thyme, scraping up any browned bits from the bottom. Bring to a boil.
- Nestle the chicken back into the pot on top of the rice. Reduce heat to low, cover, and simmer for 18–20 minutes, or until rice is tender and chicken is cooked through (165°F internal).
- If using peas or carrots, stir them in during the last 5 minutes of cooking.
- Remove from heat and let rest, covered, for 5 minutes. Fluff rice, garnish with parsley, and serve.
