Serves 6 / 30 minutes
Ingredients
- 2 lbs ground beef
- 1/2 onion, diced
- 2 cans kidney beans, drained and rinsed
- 2 cans tomatoes (diced or crushed, undrained)
- 1 can tomato sauce
- 2 cups water
- 4 tbsp chili seasoning
- 1 tsp garlic salt
- Cheese or sour cream, for topping
Instructions
- Brown the beef - In a large pot over medium-high heat, cook ground beef and diced onion together, breaking up the meat, until beef is browned and onion is soft (5-7 min). Drain excess fat.
- Add everything else - Stir in kidney beans, tomatoes, tomato sauce, water, chili seasoning, and garlic salt.
- Simmer - Bring to a boil, then reduce heat to low. Cover and simmer 20 minutes, stirring occasionally, until thickened to your liking.
- Taste and adjust - Add more seasoning or a splash of water if needed.
- Serve - Ladle into bowls and top with shredded cheese or a dollop of sour cream.
Tip: For a thicker chili, simmer uncovered for the last 10 minutes. Leftovers taste even better the next day.
